One of the most important steps after processing meat rabbits is letting the meat rest for at least 24 hours before packaging. This resting time allows the post-harvest muscle stiffness to relax, which helps the meat stay tender instead of tough. Right now, we’re packaging our rabbit meat in large plastic bags, but as we continue refining our system, we’d like to move toward a better long-term packaging option.
