It had been a minute since I prepared escabeche! I really enjoy it homemade! I prepared extra to share with friends! Once it cools on the stove top, I store in glass jars. Easy Mexican Style Escabeche! Every time I prepare this recipe the measurements are different. Depends on how many peppers and how much of the carrots and onion I want to add. I typically mix water and white vinegar with the salt ahead of time so I can taste for seasoning. Like it less acidic, add more water than vinegar.
